Braised Balsamic Chicken

  • 6 skinless, boneless chicken breast halves

  • 1 teaspoon garlic saltground black pepper to taste

  • 2 tablespoons olive oil

  • 1 onion, thinly sliced

  • 1 (14.5 ounce) can diced tomatoes

  • 1/2 cup balsamic vinegar

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • 1 teaspoon dried rosemary

  • 1/2 teaspoon dried thyme

Season both sides of chicken breasts with garlic salt and pepper.Heat olive oil in a skillet over medium heat; cook seasoned chicken breasts until chicken is browned, 3 to 4 minutes per side. Add onion; cook and stir until onion is browned, 3 to 4 minutes.Pour diced tomatoes and balsamic vinegar over chicken; season with basil, oregano, rosemary and thyme. Simmer until chicken is no longer pink and the juices run clear, about 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Japanese-Style Sesame Green Beans

Sesame Green Beans

  • 1 tablespoon canola oil

  • 1 1/2 teaspoons sesame oil

  • 1 pound fresh green beans, washed

  • 1 tablespoon soy sauce

  • 1 tablespoon toasted sesame seeds

Warm a large skillet or wok over medium heat. When the skillet is hot, pour in canola and sesame oils, then place whole green beans into the skillet. Stir the beans to coat with oil. Cook until the beans are bright green and slightly browned in spots, about 10 minutes. Remove from heat, and stir in soy sauce; cover, and let sit about 5 minutes. Transfer to a serving platter, and sprinkle with toasted sesame seeds.

Roasted Cauliflower "Rice"

Cauliflower "Rice"

  • 2 heads cauliflower, cut into 1/2-inch pieces

  • 1 1/2 tablespoons avocado oi

  • l3/4 teaspoon salt, divided

Preheat oven to 450 degrees F (230 degrees C). Line 3 baking sheets with aluminum foil and lightly spray with cooking spray.Fill a food processor 1/4 of the way with cauliflower pieces. Pulse 8 to 12 times until cauliflower is the size of rice grains. Transfer to a large bowl. Repeat with remaining cauliflower pieces.Drizzle avocado oil over cauliflower "rice"; toss until well-distributed.Spread 2 1/2 cups of the rice in an even layer on each lined baking sheet.Roast rice until golden, about 16 minutes. Remove from oven, stir well, and spread out again. Return to oven and roast for 6 minutes. Remove from oven, stir well, and spread out again. Continue roasting until browned, about 5 minutes more.Season each sheet of roasted rice with 1/4 teaspoon salt and place in a large container.
